Lemon mousse

Here we go, my favourite Catalan recipe today.

2 cups plain yogurt
1 cup sweetened condensed milk
4 good big lemons, juiced, strained and
the zest from 4 lemons.

In a large bowl, mix the yogurt, condensed milk lemon juice and zest.

Stir by hand until smooth and mixed, distribute into small serving dishes and refridgerate.

Best after at least 8 hours, or the next day.

I hope you all like it!!! I adusted the recipe to make it good and tart. After you try it, and you want it a little gentler, you could add more condensed milk...of course.

Okay, that sounds like TOTALLY way too easy!! I'll have to give it a shot, if the hubby lets me splurge on FOUR fresh lemons! LOL!

Haven't been in here in a while - sorry. Busy at work (Yay!) and we now have the electric up and running in the greenhouse. Was all ready to plant up some seeds today when I opened my new bag of seed starter from RONA and it was moldy! GROSS! Going right back to the store, for sure.

Spring is here - beautiful clear days, invigorating nights, tons of stars, lambs in the fields, blah blah blah...I couldn't be happier.
